Lard Fried Sweet Potatoes

The best sweet potatoes everrr... . INGREDIENTS •Several Large Sweet Potatoes cut into cubes •Himalayan Salt •Lard . UTENSILS •Iron Skillet (for crisping potatoes...you can use other pans, but they will not crisp them the same). •Paper Towel or Basket Strainer . DIRECTIONS •Bring a big pot of water to a boil with a bit 1/2 TBSP of salt 🧂 •Once water is to a boil, place in sweet potatoes •Let sweet potatoes boil for roughly 15min (give or take for size), draining them from the water when they are lightly soft, being SURE not to soften too much. •Drain from water and let dry and place them in a strainer to dry a bit. •When ready, place the iron skillet on medium to high heat and add in enough lard to cover the bottom and then a bit more to fry potatoes. Depending on size of pan, this could be 2-5 heaping TBSP. •Sprinkle a bit of salt into the lard and add your potatoes, making sure not to overlap them. You want the potatoes touching the pan. •Fry until you get a light brown crisp, flipping as needed to get all sides. Remove and place on paper towel to soak up extra lard or straining basket to drain. . Enjoy! 😋
